    Abstract

    The growth of food processing industry and the limited amounts a nd quality of natural colorant causes increa sing of syntetic dye usage Since the invent ion of synthetic colorant, the usage of pigment as natura l dye inc reasingly de cline s, though its existence doesn't disappea r at all. Therefore usage of natural colorant need to be improved aga in, one of them is by exploiting mangosteen skin. Till now there is not many re searchs about usage of solve nt type with addition of various types of ac id at mangosteen skin. So at this research will be done extraction of mangosteen skin pigment applies acetone solvent 60% with va rious acid HCl 1%, citrate acid 3% and acetic ac id 3%. This research aim to know influence of acid type usage (HCl, citrate and acetic acid) which adde d in extraction of mangosteene skin pigme nt by using addition of acetone solvent 60% to pigment characteristic yielded covering randement, water conte nt, hydrogen ion expone nt, color intensity, anthoc yanin rate, a ntioxidant activity and phenol total rate. Design of experiments appl ied is Complete Randomized Design (RAL) with one fac tor various acid type. Data obtained analyze d by using ANOVA at significance leve l 5%. If gotten a real differe nt result then continued with DMRT test. The best pigme nt extraction found in treatment of acetone 60% with addition of chloride acid (HC1) 1%. With characteristic of wate r c ontent 21,4855%; randement 15,6833%; hydrogen ion exponent 3,7750; red color intensity 38,7000; yellow color intensit y 9,7500; blue color intensity 11,7875; anthocyanin 0,1505 mg/100 gram; phenol total 7,1941% GAE equivalent a nd antioxidant activity 74,3627%.
