    Abstract

    Adlays contain phytochemical compounds that beneficial to health i.e: coixol, coixans, coixenolide,coixinic acid, coniferil alcohol, syringic acid, ferulic acid, syringaresinol, 4-ketopinoresinol, and mayuenolide. Red yeast rice has long used as natural food colorants. Red yeast rice good for colourant because the pigmen of red yeast rice is stable against the influence of temperature, light, oxygen, metal ions and pH changes. This research was conducted to determine the effect of substitution glutinous rice with jali and the effect of addition red yeast rice concentration in the chemical and sensory properties of tapai. This research used Completely Randomized Design (CRD) with two factor i.e: ratio of glutinous rice/adlay (K): (100/0 ; 75/25 ; 50/50 ; 25/75 ; 0/100) and concentration of red yeast rice (A): (0 % ; 1% ; 2%). The result indicated that variation of glutinous rice/adlay ratio and red yeast rice concentration significantly influenced total soluble solid, ethanol content, pH, and antioxidant activity. Increasing glutinous rice/adlay ratio decreased total soluble solid, ethanol content, and pH. The highest antioxidant activity was obtained in samples with glutinous rice/adlay ratio: 25/75 without addition of red yeast rice. The result of organoleptic test indicated that subtitution glutinous rice with adlay and addition of red yeast rice decreased the level of panelists preference to tapai. Samples with 100% glutinous rice formulation and without addition red yeast rice was the most preferred.
