    This study aims to determine the effect of difference cattle breed and muscle types on the physical quality of beef. This research was conducted from August 2016 until January 2017 at CV. Izzah Sejahtera Farm in Jagoan Village, Sambi Sub-district, Boyolali. The cattle was slaughtered at Kalioso slaughterhouse, Karanganyar. Sample preparation and analysis was conducted at Animal Production Process Farm Laboratory of Animal Husbandry Faculty of Sebelas Maret University, Surakarta, and Meat Technology Laboratory of Yogyakarta Gajah Mada University. The material used was beef from muscle Triceps brachii (TB) and Pectoralis profundus (PP), coming from 3 different breeds of cattle Simmetal Ongole Crossbreed, Limousin Ongole Crossbreed and Ongole Crossbreed 3 heads each with average of body weight were 407,5±66,10 kg and age 18 ‒ 24 months. The experimental design used was completely randomized design of nested design with 3 treatment of the cattle breed and 2 treatment of the muscle type with 3 replications. The data were analyzed by analysis of variance and continued with Tukey test. The result showed that differences of cattle breed affected significantly (P<0,05) to pH value and cooking loss. Muscle types affected significantly (P<0,05) to tenderness. The conclusions of this study were Simmetal Ongole Crossbreed and Limousin Ongole Crossbreed have better meat physical quality than Ongole Crossbreed, and PP muscle has better tenderness value than TB muscle.
