    Abstract

    Ginger pulp yoghurt is one of the diversification product by using the extracts of distillated ginger essential oil that is untapped maximally as the processed food. Ginger pulp yoghurt is a health drink that has fresh and sour flavor as produced by the fermentation process with the aid of Lactid Acid Bacteria (LAB). The addition of distillatead ginger essential oil in the yoghurt production is expected to get the benefits of antioxidant compounds. The purpose of this research is to know the best physical and chemical characteristics and formulations on ginger pulp yoghurt. The research using Complete Randoised Design (RAL) with one treatment factor is the addition of ginger extract 4.5%, 6% and 7.5%. The data were analyzed using ANOVA method followed by DMRT test. The addition of ginger pulp has significant effect on the increase of antioxidant activity, total acid, yoghurt viscosity and decrease of pH. The best result was obtained extract of 4.5% ginger pulp with of 1.98% antioxidant activity, total acid 1.497, pH 4.09 and viscosity 10.053 cp. The results of the economic analysis of Ginger pulp yoghurt is capacity 5,512 packaging/month with selling price of Rp 7,000/packaging then obtained a net profit of Rp 5,750,687/month, Return on Investment (ROT) before taxes 26.6%, Return on Investment (ROI) after tax 9.2%, Pay Out Time (POT) 10.8 months, Benefit Cost Ratio (Net B/C) 1.2 and stated that this company deserves to be developed for the B/C is more than one Keywords: distillation essential oil, extracts of ginger pulp, milk, yoghurt.
