    Abstract

    Ice Cream with The Addition of Banana Peel Var “Raja” Henny Purmasari1, Dwi Ishartani2 ABSTRAK Ice cream is one of the kind of food that has frozen phase, which is made by freezing a mixture of milk, sugar, stabilizer, emulsifier, and other pasteurized and homogenized material to obtain a homogeny product. The natural stabilizer that used in making this ice cream is banana peel. Banana peel ice cream is an innovation of ice cream products by adding of banana peel extract. Besides of that, banana peel var. “Raja” ice cream contains antioxidant compounds. The production practice aims to understand how to make banana peel var. “Raja” ice cream, to know the effect of panelist acceptance on the sensory characteristics of banana peel var. “Raja” ice cream, to know the antioxidant content of banana peel var. “Raja” ice cream, and to know the business feasibility in terms of economic analysis to get the selling price from the product. In this production practice is done making ice cream with the addition of banana peel extract and ice cream without the addition of banana peel var. “Raja” extract as a control. Then performed, sensory analysis to determine the level of consumen acceptance. The parameter of this sensory test includes colors, flavors, aromas, textures, and overall banana peel var “Raja” ice cream. In addition, the antioxidant activity test was done by using DPPH method. The results of sensory analysis of banana peel var. “Raja” ice cream is selected formulation 4. The results of antioxidant activity analysis banana peel var. “Raja” ice cream is 77.025%. The result of economic analysis, the production capacity of banana peel var “Raja” ice cream is 10.000 packs/month, cost of goods sold is Rp 5.830/packaging, so net profit is Rp. 4.888.535/month. The business will state at break even point at the production level is 5.131 packs/month with the price is Rp 4.891/pack and will run into a payback within 12 months. ROI before tax amounted is 14,11% and after tax is 6,87%. While, the B/C banana peel var “Raja” ice cream is 1,1 so this business worth to do because the value of B/C more than 1.
