    Abstract

    Developing of healthy food product need to develop to decrease of dependence of consuming unhealthy product. Black sticky rice resulted as a source of antioxidant which came from a pigment, it called Antosianin. Black sticky rice also used in various food products. The purpose on this research was to know ways of making Black Sticky rice Eggroll Cookies with addition of cinnamon powder, beside that want to know the antioxidant activity in the product and business appropriateness of Black Sticky Rice Eggroll Cookies which is observed by economy analysis. Black Sticky Rice Eggroll Cookies made from fresh egg, black sticky rice, flour, cinnamon powder, margarine, SP, salt, sugar, and skimmed milk powder. Black Sticky Rice Eggroll Cookies made by 3 formulas. The formulas are, F1 using black sticky rice amount 80 gr; F2 using a ratio of flour black sticky rice amount 70 gr : flour amount 10 gr; and F3 using a ratio of flour black sticky rice amount 40 gr : flour amount 40 gr. Based on the test of organoleptic from 40 panelist resulted that there isn’t an obvious difference of three formulas however, at parameter of aroma has a different of level of favourite. Antioxidant activity of Black Sticky Rice Eggroll Cookies resulted amount 45%. Based on the result of economy analysis, Black Sticky Rice Eggroll Cookies has a production capacity amount 1.650 packs per month with the main cost of production is Rp 11.474, selling price is Rp 13.000 per pack, so that get the profit amount Rp 2.409.799 per month, break event point (BEP) of capacity amount 1.266 packs per month, return of investment (ROI) before income tax amount 7,43%, return of investment (ROI) after income tax amount 13,04%, pay out time (POT) during 25 months, benefit cost ratio (Net B/C) amount 1.132 which is resulting that this manufacture is possible to be implemented, because has Net B/C value more than 1.
