    Abstract

    PRODUCTION PRACTICE OF MAKING PEMPEK MACKEREL FISH Anindi Mega Erianti Ir. Nur Her Riyadi Parnanto, M.S Ardhea Mustika Sari, S.T.P.,M.Sc. SUMMARY Pempek is a typical food from Palembang which is made from raw material of fish, cylindrical that is produced from the mixture of fish meat (fish meat content is not less than 50%) and starch or without the addition of food permitted. Pempek is a food that is quite popular among the people. Pempek is a food that is quite popular among the people. Pempek shaped like a gel textured elastic and elastic. The basic ingredients of making pempek are mackerel, tapioca flour, wheat flour, water, fine salt and other additional seasonings. The purpose of this observation is to know the process of pempek kembung fish processing, knowing the best formulation, chemical analysis and economic analysis. The composition of pempek mackerel fish is F1: 150 gram of mackerel fish. F2 : mackerel fish 250 gram. F3: mackerel fish 200 gram. Based on the results of organoleptic test method obtained the most preferred formulation of the taste parameters of the formulation of 150 gram mackerel fish, on aroma parameters obtained the most preferred formulation of 200 gram mackerel fish on the color parameter obtained the most preferred is 150 grams of mackerel fish, the texture parameters obtained the most preferred is 150 grams of mackerel fish, on the parameters of overalls the most preferred is 150 grams of bloated fish. Based on analysis of chemical characteristics obtained protein content 1.007%. Fat content 1,037%. Result of economic analysis of pempek mackerel fish that is 2,400 pack / month with sale price Rp.7.854 /packs, Then earn net profit Rp.3.203.837 / month, BEP of 1445 packs with BEP price Rp.6.545, ROI before tax of 19.99%, and ROI after tax of 17.99%.
