    Abstract

    ABSTRAK Kegiatan magang ini bertujuan untuk mengetahui proses produksi dan mempelajari pengawasan mutu proses pengolahan mie instant mulai dari tahap penyediaan bahan baku sampai penanganan pendistribusian produk di PT. Tiga Pilar Sejahtera Food, Tbk Sragen. Pelaksanaan magang dimulai pada tanggal 1- 27 Maret 2010 di PT.. Tiga Pilar Sejahtera Food, Tbk Sragen Jawa Tengah Indonesia. Metode pengumpulan data yang digunakan dalam kegiatan magang ini adalah observasi, wawancara, pencatatan, studi pustaka dan terjun langsung ke lapangan dalam kegiatan-kegiatan proses produksi. Pengambilan lokasi praktek magang di PT. Tiga Pilar Sejahtera Food, Tbk Sragen karena perusahaan tersebut merupakan perusahaan yang mengolah hasil pertanian yang berbasis mie instant. Selain itu, PT. Tiga Pilar Sejahtera Food, Tbk merupakan perusahaan dalam negeri yang berdedikasi tinggi. Tahapan proses produksi mie instant di PT. Tiga Pilar Sejahtera Food, Tbk adalah sebagai berikut yaitu penerimaan bahan baku, penuangan bahan, pengadukan, pembentuikan lembaran, pembentukan untaian, pengukusan, pemotongan dan pelipatan, penggorengan, pendinginan, pengemasan, dan penyimpanan. Hasil praktek magang menunjukkan bahwa proses produksi dan pengawasan mutu mie instant PT. Tiga Pilar Sejahtera Food, Tbk sudah sesuai dengan standar yang telah ditetapkan oleh pihak perusahaan. Untuk sistem sanitasi dan pengolahan limbahnya juga sudah baik karena selalu diujikan setiap bulannya ke Balai Lingkungan Hidup (BLH) Jakarta. Kata Kunci : Pengawasan mutu produksi mie instant ABSTRACT This apprentice was aimed to knew production process and studied quality control of instant noodle processing started from raw material suplly until product distribution handling in Tiga Pilar Sejahtera, Ltd Sragen. The apprentice was done on March 1st until March 27th 2010 in Tiga Pilar Sejahtera, Ltd, Sragen, Central Java, Indonesia. Data colecting method used in this apprentice was observation, interview, record keeping, book study and involved directly in the production process activity. Apprectice location was in Tiga Pilar Sejahtera, Ltd Sragen because this company was processed a noodle based on agricultural product, in addition, Tiga Pilar Sejahtera, Ltd was a domestic company having a high dedication. Production process phase of instant noodle in Tiga Pilar Sejahtera, Ltd was as followed: raw material acceptance, material molding, stirring, sheet forming, string forming, steaming, cutting and folding, frying, cooling, packing and storaging. Apprentice practice result showed that production process and quality control of instant noodle in Tiga Pilar Sejahtera, Ltd had agreed with standard settled by the company. For sanitation and was processing system was done very well because always tested every month by Jakarta Environment Council. Keywords : Quality Control of Instant Noodle Production Process Flour
