    Abstract

    Production of watermelons during 2013 and 2014 is likely to increase, so it would raise the waste amount of watermelon rind by the time. Watermelon rind usually just thrown away or used as animal feed. In fact, watermelon rind contains a number of useful components, one of them is called pectin. This research is aimed to know the effect of energy power and processing time on pectin extraction to characterize pectin from watermelon albedo waste. Research using randomized factorial design with two factors. The first factor consists of variations of the microwave power is 119.7 W, 199.5 W and 279.3 W and the second is the length variation of the extraction time is 6 minutes, 9 minutes, and 12 minutes. The results showed that pectin extraction from waste albedo watermelon with MAE method produces yield of 3.925% -5.766%, with equivalent weight was 1249.702 to 2007.756, and has lower levels of methoxyl at 1-7 treatment variations (<7%), while in treatment 8 and 9 indicate a higher level of methoxyl (> 7%). Galacturonic acid level that appropriates with IPPA standard was resulted from treatment 8 and 9 at 279.3 watt of tool’s energy power for 9 minutes and 12 minutes. As well as degree of esterification, this extracted pectin showed a relatively high ester pectin (>50%). Based on the results of pectin characteristics, best treatment extraction for watermelon albedo pectin with MAE method was at 279.3 watt for 12 minutes.
