    Abstract

    The aims of this research were to find out physical, chemical, and sensory characteristics of simulated chips, also to determine protein source formula and the best formula of simulated chips. Experimental design using in this research was Completely Randomized Design (CRD) with one factor, that was ratio variation of soy flour and nile tilapia. The ratio of soy flour and nile tilapia that was used in this research were 40:60 (F1), 50:50 (F2), and 60:40 (F3). Obtained data were analized statistically by one way ANOVA method. If it showed significant results then it was continued with Duncan’s Multiple Range Test (DMRT) at 5% significance level. Results of this research showed that F1 was the formula with lowest maximum compression force value. The difference formulas were not affected the ash, protein, dry basic carbohydrate, and free fatty acid content. The highest moisture and fat content, also the lowest ash and wet basic carbohydrate content were found in simulated chips F3. The difference formulas were not affected the appearance, aroma, texture, and overall parameters. Simulated chips F1 was the most preferred by panelists in color and taste parameters. All of formulas were qualified as protein source with average value 22 grams per 100 grams product. The best formula based on physical, chemical, and sensory characteristics was F1 with maximum compression force value 1671 gfs, moisture content 1,99%wb, ash content 5,58%db, fat content 30,84%db, protein content 22,85%db, carbohydrate content 40,73%db, and free fatty acid content 0,23%db.
