    Abstract

    The purpose of this research observed combination AR2 of polygalacturonase enzyme (PG) pectinolytic bacterial isolate and pectinesterase enzymes (PE) pectinolytic bacterial isolate KK2 on super red dragon fruit juice clarification based on parameters pH, total dissolved solids, viscosity, and transmittance. This research used Factorial Completely Random Design (FCRD) with two factors, variation of PG enzyme concentration (0%; 0.06%; 0.09%; 0.1%) and variation of PE enzyme concentration (0%; 0.5%; 0.75%; 1%), three times replication of samples and one time analysis. The data were analyzed by Two Way ANOVA method. The results of this research was obtained partial enzymes activity of PG and PE (0.161 U/ml and 0.351 U/ml). Enzymes interaction affect on transmittance and viscosity, but there were no interactions on pH and total dissolved solids. Sample, which added of PG and PE enzymes, can increase pH and transmittance, but it can decrease total dissolved solids and viscosity. Sample, which added of PG enzyme 0.1% and PE enzyme 1%, was selected because it can increase pH (5.22); decrease total dissolved solids (11.6 0Brix); increase transmitance (1.41 %T); and decrease viscosity (11.76 cP).
