    Abstract

    CHEMICAL PROPERTIES AND ANTIOXIDANT ACTIVITY OF EXTRACT AQUADES DREGS DISTILLATION EMPRIT GINGER (Zingiber officinale var. Amarum) GARNENDA PRISCILLA MENTARI H0912058 SUMMARY Emprit ginger (Zingiber officinale var. Amarum) is a leading commodity most in demand by the people of Indonesia. Ginger rhizome contains many bioactive compounds such as phenolic compounds (shogaols and gingerols) and essential oils. One form of processed from fresh emprit ginger namely essential oil obtained from the distillation process. A byproduct from the process of distillation emprit ginger namely dregs distillation emprit ginger. It is regrettable if the dregs used as fuel furnaces distillation because in the dregs still contain bioactive compounds. This study was conducted to determine effect as well as the best condition from the extraction temperature (55ºC, 75ºC, 95ºC), the extraction time (15, 30, 45 minutes) and a combination of temperature and time extraction maceration dregs distillation emprit ginger with aquadest solvent on the antioxidant activity (DPPH and reducing power methods), total phenols and total flavonoids. As well as to identify the components of compounds contained in extracts of dregs distillation emprit ginger of each treatment using GC-MS analysis. The results of the analysis each variables the extraction temperature and extraction time affect the antioxidant activity (DPPH and reducing power methods), total phenols and total flavonoids. The combination of temperature and time of extraction did not show the presence of interaction on antioxidant activity (DPPH and reducing power methods) as well as total phenol, while in total flavonoids demonstrate interaction. The results of antioxidant activity using DPPH with the best treatment at 95°C and 45 minute i.e. 8,23±0,88 % while at reducing power methods the best treatment at 95°C and 30 minute i.e 0.80 ± 0.02 mg AAE/g extract. The results of total phenols and total flavonoids with the best treatment at 95°C and 45 minutes i.e. 1,71 ± 0.08 mg PE/g extract and 5,68 ± 0.03 mg RE/g extract. GC-MS analysis on dregs distillation emprit ginger extract produced four largest components namely α-curcumene, α-zingiberene, β-sesquiphellandrene and β-bisabolene. Four of these compounds is a group of sesquiterpenes that have potential as antioxidants. Keywords: Emprit ginger, dregs distillation, antioxidants activity, total phenols, total flavonoids, GC-MS.
