    Abstract

    Simulation chips is a chips made with basic ingredient flour formulation. Ingredients used for simulation chips are catfish and soy flour. Catfish and soy flour are local food comodity and have good protein value. The objective of research was to determine the best Simulations chips formulation based on its physics, chemical, and sensory property. This research employed a Completely Random Design with one factor: varieted of soy flour and catfish formulation as a simulation chips ingredients. The data obtained was analyzed using one-way ANOVA method; if there was a difference, it was followed with significance test using Duncan’s Multiple Range Test (DMRT) at significance level of α = 0,05. The result of research showed that F2 (50 soy flour : 50 catfish) was the best formula based on its physics, chemical, and sensory property. The chemical analysis on simulation chips showed moisture content 3,97%wb, ash content 5,36 %db, fat content 33,22 %db, protein level 23,06 %db, carbohydrate content 39,66 %db, and FFA content 0,33 %db. The physics analysis simulation chips showed Fmax level 12,85 N.
