    Abstract

    Production Practice Mangosteen Jam Shelvia Kumala1 H3113085 Dr.Ir.Rofandi Hartanto, MP2, Rohula Utami, S. TP., MP3 Abstract The purpose of production practice is to investigate the process production of mangosteen jam and its raw materials, to know level of vitamin C and antioxidant in mangosteen jam, to analyse production cost of mangosteen jam. The main ingredients of mangosteen jam production are mangosteen fruits, water, sugar, and lime. Mangosteen jam is made through several process: selecting the main ingredients, separation of ingredients, destruction of ingredients, cooking, freezing, and packaging. Production practice of mangosteen jam is done through three formulations: 1) formulation 1: mangosteen is 90 g, sugar is 110 g, and lime is 0 ml; 2) formulation 1: mangosteen is 90 g, sugar is 110 g, and lime is 5 ml; 3) formulation 3: mangosteen is 90 g, sugar is 110 g, and lime is 10 ml. Based on the observation, the most favorite mangosteen jam is mangosteen jam which made with formulation 3 (mangosteen is 90 g, sugar is 110 g, and lime is 10 ml). Chemical analysis is process of analysing antioxidant and vitamin C. It is done to produce high quality mangosteen jam. The level of vitamin C in mangosteen jam is 0.48% and antioxidant activity is 81.54%. The production of mangosteen jam is able to produce 2.500 jar in a month with selling price is Rp. 20.000/jar. It can be concluded that net profit of this selling is about Rp. 16.274.051. This business will be in a breakeven point (BEP) if production level is 493 jar, ROI before tax is 45.7%, and ROI after tax is 45.2%, POT value for two months is used to return assets, to gain net profit, and Net BC value of mangosteen jam is 1.4 which means that production process of mangosteen jam can run well.
