    Abstract

    Gembukan is one of the typical Indonesian food that are easily found in Surakarta. Gembukan usually made from wheat flour mixed with sugar and various other materials. The problems occurring in the gembukan processing are their variation on size and flavor as well as food safety is not guaranteed. The purpose of this final project is to investigate the process of making, evaluating IRT conditions and the process of designing, manufacturing concept of CPPB in IRT "Pak Poko" at Jagalan’s Village, RT 04 RW IX, Jebres, Surakarta. The methods employed were interview, observation, library study, and documentation. The process of making gembukan includes mixing materials , mixing, the standing Batter , Batter printing , frying , draining and packaging. Based on result of test and compared with the quality requirement of SNI 01-3840-1995 about sweetbreads and BPOM RI about the terms of microbes in food it could be found that the parameters corresponding to SNI and BPOM RI were water level 16.35 %, ash level 0.49% , sugar level 7.48% and total plate count 2,635x103 colonies / g, while the one not corresponding to SNI was fat level 17,51 %. The concept of CPPB is applied to quality control of IRT conditions, raw materials, production and processing stages to produce the final product quality and safety aspects are good.
