    Abstract

    APPLICATION OF GOOD MANUFACTURING PROCESS (GMP) IN PROCESS OF MAKING MIE MOCAF IN SMALL AND MEDIUM ENTERPRISES (UKM) “PUTRI 21” GUNUNGKIDUL , YOGYAKARTA Alfian Nurdin1 H3113008 Asri Nursiwi, STP., M.Sc.2 dan Siswanti, S.TP., M.Sc.2 Practice Quality Control in UKM “Putri 21” Gunungkidul Rich Products mie mocaf conducted in order do knot the process of making mie mocaf, evaluate and desing concepts CPPB on rawmaterials, production process, and final product. Data bas obtained trought interviews, observations, sampling, testing, and literature. Each stage in the production process of mie mocaf always taken into good treatment to produced mie mocaf have good quality. The analysis showed the raw material mocaf, tapioca, wheat, salt is gol enough in handling, baut the handling of bot Faw material bor additional must remain monitored agan. As for the Quality Control of the production process must be considered during the process of mixing material, cutting, and roasting, as well as the cleanliness of tools and production so that quality mie mocaf good. Mi mocaf testing the final product with the type of test showed the Water content 7,55%, ash content that does not dissolve in acid 0,05%, protein content 5,68%, integrity level 97,17%, and total plat count of 7,5x101.colonies/gram. The design concept CPPB on makin mie mocaf process is done by using the basi BPOM on Good Manufacturing Process (2012). Evaluations of making-mie mocaf is accordance with the concept BPOM (2012).
