    Abstract

    THE GOOD MANUFACTURING PRACTICES (GMP) OF DRIED GINGER CANDY IN SME “SATRIA” (CIREBON, WEST JAVA) Vindy Tian Agustine H 31113095 Rohula Utami, S.TP., MP2 and Lia Umi Khasanah, S.TP., M.Sc 2 ABSTRACT Dried ginger candy is a snack product that can be directly consumed. Ginger candy was made from fresh ginger, water, salt, and whiting. Dried ginger candy has efficacy to throat fresh, warm the body, and can relieve throat when coughing. The study purposes were evaluated the Good Manufacturing Practices (GMP) of dried ginger candy in SME “SATRIA”, prepared the concept of Good Manufacturing Practices (GMP) of dried ginger candy in SME “SATRIA”, and determined the quality characteristics of dried ginger candy that including of water content, sodium content, sucrose sugar, fiber content, and volatile oil content. The evaluation results of the Good Manufacturing Practices (GMP) of dried ginger candy product in SME “SATRIA” is good enough and the test results are 12.28% water content, 0.132% sodium content, 59.41% sucrose sugar content, 5.101% fiber content, and 2.112% volatile oil content. Based on the evaluations the concepts including of location, production environment, floors, walls, ceilings, doors of the room, windows, vents, completeness production room, storage areas, production equipment, water supply facilities and activities of hygiene and sanitation, health employee, employee hygiene, employee’s habits, maintenance and hygiene program, storage and labeling of food have been meets the requirements. While the concepts of supervision by the responsible person, product recalls, record keeping and documentation, and training of employees do not fully comply with the requirements. The preparations of GMP concepts are necessary to guarantee quality and safety of dried ginger candy products in SME “SATRIA”, so it can be accepted in the community and qualified.
