    Abstract

    Implementation of Production Practice was conducted to determine how to manufacture crackers catfish as food diversification, knowing the protein content of catfish crackers, knowing A test on crackers product. The process of making crackers catfish there are 7 stages, stripping the meat, stirring batter, fish printing, steaming, cooling and molding 2, drying, frying and packaging. the result of the analysis of proteins by 56.9%. for organoleptic test scoring using the parameters of color, flavor, texture, aroma and overall. Catfish crackers profuct are preferred by mixing dough with meat 5%, feasibility analysis includes tube production capacity in 1250/month and the price Rp 14.000, -/botol then obtained a profit of Rp 3.396.777 -/month , BEP 666 bottles and obtained a profit of B/C value of 1.2 and IRR of 67.5% this value >12% (Bank rate is generally 12% which means that catfish crackers making bussiness deserves to be developed as a B/C is more than 1 and IRR exceeds Bank interest.
