    Abstract

    THE CONCEPT OF GOOD MANUFACTURING PRACTICE (GMP) IN PRODUCING MEATBALL TOFU IN “EQ” SME, SINGKIL, KARANGGENENG, BOYOLALI Ika Desri Setyowati1 Edhi Nurhartadi, S.T.P., M.P2 and Ir. Kawiji, M.P2 ABSTRACT Tahu Bakso (meatball tofu) is processed food made of meat and skin tofu. It is processed by means of making meatball dough, cracking skin tofu, putting meatball dough, steaming, leaking through and cooling. Process evaluation started from raw material to meatball tofu production process. To find out the characteristics of meatball tofu quality in “EQ” SME, an analysis was conducted on water, ash, protein levels, and free fatty acid rate (%FFA), total plate number based on SNI 3818-2014 about combined meatball and an evaluation was conducted on CPPB. The characteristics of meatball analyzed included water level of 69.6%, ash of 1.91%, protein of 25.53%, free fatty acid (%FFA) of 0.39%, and total plate number of 1.3 × 104 colony/gram. Considering the evaluation of CPPB in “EQ” SME, the parameters that had not been met were: cleanliness and sanitation, and production tool layout, employees’ health and hygiene, packaging, food labeling, and employee training that should be applied in “EQ” SME so that “EQ” SME applied employees’ health and hygiene. Information should be added to packaging such as composition, production date, and expired date, production code. Food labeling should contain P-IRT number, clean weight or clean content, rightful (halal) label so that it facilitated the consumers to identify meatball tofu product, to improve meatball tofu product quality, raw material quality control, production process, final product, and food security guaranty.
