    Abstract

    NUTRITION AND ORGANOLEPTIC ANALYSIS ON LAMTORO (Leucaena leucocephala (Lam.) de Wit) KETCHUP PRODUCTION WITH INOCULUMS VARIATION AMBAR KRISTIANA Biological Study Program, Mathematics and Sciences Faculty, Sebelas Maret University, Surakarta ABSTRACT Lamtoro (Leucaena leucocephala (Lam.) de Wit) contains protein (30%) similar to soybean (35-40%). In Wonogiri, lamtoro is fermented into tempeh with tempeh inoculum and usar. This research aimed to find out which ketchup inoculums (tempeh inoculum, usar and Aspergillus oryzae) provided the best result of organoleptics test (color, taste and aroma) and to find out the nutrition contents (carbohydrate, protein and lipid) in lamtoro ketchup with inoculums variation. The production of ketchup was conducted in two stages: koji (tempe) fermentation and moromi (ketchup) fermentation. Koji fermentation employed varying inoculums: tempe yeast, usar and Aspergillus oryzae. Koji was chopped and then dried to be fermented later in NaCl 20% saline solution (moromi fermentation) for 45 days. Moromi was then filtered for its filtrate to get ketchup liquid, and pasteurized at 72 for 30 minutes. Color, taste and aroma of lamtoro ketchup was not different significantly at significance level of 0,610; 0,312 and 0,585 based on statistical non-parametric Kruskal-Wallis (significance level of 0.05). Total carbohydrate contents of lamtoro ketchup with varying inoculums were tempeh inoculum, usar and Aspergillus oryzae in series 18.67%; 14.74%; and 10.22% while dissolved protein contents were 1.56%; 1.51%; and 1.53%; and total lipid contents were 1.15%; 1.21%; and 0.86%, respectively.
