    Abstract

    ABSTRAK Kegiatan magang ini bertujuan untuk mengetahui pengengalian mutu proses produksi di perusahaan roti milano surakarta.pelaksanaan magang di laksanakan pada tanggal 16 april-16 mei 2009 di perusahaan roti milano, surakarta. Metode pengumpulan data yang di gunakan dalam kegiatan magang ini adalah observasi, wawancara, pencatatan, studi pustaka dan terjun langsung kelapangan dalam kegiatan pengendalian mutu proses produksi. Pengambilan lokasi praktek magang di perusahaan milano, surakarta karena perusahaan tersebut merupakan perusahaan yang mengelolah hasil pertanian, selain itu perusahaan roti milano merupakan perusahaan dalam negeri yang berdedikasi tinggi. Pengendalian mutuproses produksi roti pisang di perusahaan roti milano surakarta adalah sebagai berikut Penimbangan Bahan Baku, Pengadukan, Fermentasi, Pembentukan Adonan, Pengovenan, Pengepakan. Pada tahap proses produksi di perhatikan pengendalian mutu pada tiap tahapan agar didapat produk yang berkualitas dan aman untuk dikomsumsi oleh masyarakat. Hasil praktek magang menunjukkan bahwa proses produksi roti pisang sangat baik, dan untuk pengendalian mutu bahan baku harus lebih diawasi agar tidak banyak roti yang rusak, untuk sedangkan pengendalian mutu proses produksi harus diperhatikan pada kebersihan alat produksi agar mempunyai kualita mutu yang tinggi. ABSTRACT Activity of this apprentice aims to know quality control of production process in bread company Milano Surakarta. Execution of apprentice was done on April 16th – May 16th 2009 in Bread Company Milano, Surakarta. Data collecting method used in activity of this apprentice are observation, interview, listing, book study and work directly in activity of production process quality control. Retrieval of apprentice place in Company of Milano, Surakarta because the company is a company which process agricultural product, besides Bread Company Milano is domestic company having high dedication. Production process quality control of banana bread in Bread Company Milano Surakarta is as follows raw material weighing, stirring, fermentation, dough forming, oven and packing. At production process phase, we must pay attention to quality control at every step to be gotten product with good quality and safe for consumed by public. Result of apprentice practice indicates that production process of banana bread is very good, and raw material quality control have to be more be observed in order not to many damage breads, while production process quality control must be gave attention to hygiene of production equipment produce to have high quality product.
