    Abstract

    Nowadays, Indonesia possess a high dependence on imported wheat. Breadfruit has potency to be developed to reduce the consumption of wheat flour, however it has less desirable characteristics that are less expanded and a little water binding. Therefore it is important to modify the breadfruit flour to improve the less desirable characteristics. In this study, breadfruit was reduced in size and then soaked in a solution of acetic acid with various concentrations and variations of soaking time and then milled to produce modified breadfruit flour. Thus it needs to determine the effect of soaking time and the concentration of acetic acid to the physicochemical characteristics of modified breadfruit flour. The purpose of this research is to study the effect of the soaking time and the acetic acid concentration to physicochemical characteristic of breadfruit flour which are : viscosity, lightness, swelling power, moisture content and reducing sugar. This research used Factorial Randomized Design consisting of two factors which are acetic acid concentrations (0,05; 0,1 and 0,15%) and soaking time (30, 60 and 90 minutes). The result showed that the increasing of acetic acid concentration significantly affect to increase of viscosity, lightness, moisture content and reducing sugar; however don’t significantly affect to increase the swelling power of breadfruit flour. The soaking time affect to increase the viscosity, lightness, swelling power, moisture content and reducing sugar of breadfruit flour significantly.
