    Abstract

    Mangosteen peel could be benefit as food’s dye and antioxidant, because it contains antocyanin. At extraction of antocyanin’s pigment on mangosteen peel, up till now it was unexplored about solvent that was used by adding acid’s variation. Therefore, it could be research further whether kind of using acid that was added inside extraction process of antocyanin’s pigment of mangosteen peel by ethanol 95% could be increasing the characteristic of pigment’s extract. This research is purposed to find out the effect of using kind of acid (chloride acid, citrate acid, and acetate acid) that were added inside extraction process of antocyanin’s pigment of mangosteen peel by using ethanol 95% about efficiency, water content, acidity, color intensity, antocyanin content, antioxidant activity and phenol content those pigment. The program test that was used was RAL by a factor, which was acid’s variation (without acid, chloride acid, citrate acid, and acetate acid). The obtainable data was analyzed by ANOVA to find out the difference of treatment on level α = 0.05 and by DMRT on same level further. Best characteristic of concentrated pigment that were resulted on ethanol 95% that was added of chloride acid, by water content 20.05%(b/b), efficiency 6.12%(b/b), acidity 3.55, color intensity 6.75, antocyanin content 0.13mg/100gram, antioxidant activity 83.97% and phenol content 5.56% equivalent GAE. Chloride acid is one of strong acid and monoprotic. Keywords: antocyanin, acid, ethanol, mangosteen.
