    Abstract

    ABSTRACT Carrot custard sheet is processed food ingredient made from the main ingredients of carrot (Daucus Carota L) with sugar, vanilla, cornstarch, sodium benzoate, soybean milk as an additive, carrots contain useful to the human body such as water, protein, carbohydrates, fats , fiber, ash, anti-cancer nutrients, natural sugar (fructose, sucrose, dextrose, lactose, and maltose), pectin, glutanion, minerals (calcium, phosphorus, iron, potassium, sodium, magnesium, chromium), vitamins (beta carotene, B1, and C) and asparagines. The purpose of making the custard filling with carrots materials for food diversification can increase the sale value of carrots and know the benefits of carrots. Production practices in the implementation of sensory analysis with fondness test, chemical analysis, and economic analysis. For organoleptic test by using test preference for color, flavor, texture, aroma and overall. Method for making custard carrot sheet that includes stripping, washing, crushing, screening, cooking, refrigeration, oven, cutting and packaging. A result of the test states that carrot custard product sheet was not found significant difference, the authors use a carrot custard sheet with two formulations, namely the addition of 1 g of vanilla, 30 g cornstarch, 80 g sugar, 0.16 g of sodium benzoate, and 50 ml of milk soybeans. Further analysis of the chemical characteristics include levels of β-carotene. Results of the analysis of β- carotene carrot custard 117 sheets, 9 ug / g. Further feasibility analysis, including production capacity, price, profit, Break Even Point (BEP), and Benefit Cost Ratio (B / C). The result is the production capacity of 3750 packs / month and the selling price is Rp. 2,000, -/kemasan the net profit of Rp. 2166632, -/bulan, BEP at the level of production by 994/kemasan with price Rp. 1187/kemasan and obtained a B / C of 1.42, which means worthy effort custard carrot sheet to be developed as the B / C is more than 1. IRR (intenal Rate of Return), reaching 42.83% which is well worth the effort because they exceed the interest rate. Kata Kunci : Carrots, Production Process, Vla carrot sheet. INTISARI Vla wortel lembaran adalah bahan olahan makanan yang dibuat dari bahan utama wortel (Daucus Carota L) dengan gula, vanili, maizena, natrium benzoate, susu kedelai sebagai bahan tambahan, wortel memiliki kandungan yang berguna bagi tubuh manusia seperti air, protein, karbohidrat, lemak, serat, abu, nutrisi anti kanker, gula alamiah (fruktosa, sukrosa, dekstrosa, laktosa, dan maltosa), pektin, glutanion, mineral (kalsium, fosfor, besi, kalium, natrium, magnesium, kromium), vitamin (beta karoten, B1, dan C) serta asparagines. Tujuan dari pembuatan vla dengan bahan wortel yaitu melakukan diversifikasi pangan untuk dapat meningkatkan nilai jual wortel dan mengetahui manfaat wortel. Dalam pelaksanaan praktek produksi dilakukan analisis sensori dengan uji kesukaan, analisis kimia serta analisis ekonomi. Untuk uji organoleptik dengan menggunakan uji kesukaan terhadap warna, rasa, tekstur, aroma dan overall. Metode pembuatan vla wortel lembaran yaitu meliputi pengupasan, pencucian, penghancuran, penyaringan, pemasakan, pendinginan, pengovenan, pemotongan dan pengemasan. Hasil dari uji kesukaan menyatakan bahwa produk vla wortel lembaran tidak ditemukan beda nyata, penulis memakai vla wortel lembaran dengan formulasi dua yaitu dengan penambahan 1 g vanili, 30 g maizena, 80 g gula pasir, 0,16 g natrium benzoate, dan 50 ml susu kedelai. Selanjutnya analisis karakteristik kimia meliputi kadar β- karoten. Hasil analisis β- karoten pada vla wortel lembaran 117, 9 μg/g. Selanjutnya analisis kelayakan usaha, meliputi kapasitas produksi, harga jual, laba, Break Event Point (BEP), serta Benefit Cost Ratio (B/C). Hasilnya adalah kapasitas produksi 3750 kemasan/bulan dan harga jual Rp. 2.000,-/kemasan maka diperoleh laba bersih Rp. 2.166.632,-/bulan, BEP pada tingkat produksi sebanyak 994/kemasan dengan harga Rp. 1187/kemasan dan didapatkan nilai B/C 1,42 yang artinya usaha vla wortel lembaran layak untuk dikembangkan karena nilai B/C lebih dari 1. IRR (Intenal Rate of Return) yaitu mencapai 42,83% yaitu usaha tersebut layak jalan kerena melebihi suku bunga bank. Kata Kunci : Wortel, Proses Produksi, Vla wortel lembaran.
