    Abstract

    Abstract Sorghum (Sorghum bicolor) is one of the cereal crops that have a starch content of up to 71%. But society has yet to harness sorghum maximally. Therefore, need for a breakthrough to enhance the economic value of grain sorghum, one of them with making glucose syrup. The final project is expected to add to the knowledge about how to make glucose syrup with a hydrolysis process and provide knowledge about the nutrients contained by glucose syrup, so the glucose syrup that produced can be an alternative source of sugar than glucose. In this final project, glucose syrup from starch grain sorghum obtained by hydrolysis using HCl solution in batch with 40% slurry concentration or ratio between starch and acid solution 2:3. Hydrolysis process is carried out at a temperature of 95 º C with a stirring speed of 350 rpm for 2 hours. Concentration of HCl solution is used as a catalyst is 0.3 N. Hydrolysis then neutralized with 0.3 N NaOH, adsorbed by activated charcoal, and filtered. The filtrate was then concentrated filtering results with a vacuum evaporator at 60 º C with a rotation speed of 100 rpm. Glucose syrup were then tested nutrients. The test results showed that the glucose syrup has a nutritional content with 89.44% glucose, 3.10% protein, 1.30% fat, carbohydrates 76.905%, 0.7921 ppm sodium, 17.465% moisture content, ash content 1.23% , and the total energy 307.62 kcal.
