    Abstract

    Meat is a foodstuff that gets easily affected by bacterial contamination, which can degrade the quality of the meat, both physically and chemically. One of the ways to improve the quality and extend the shelf life of meat is through the addition of ginger (Zingiber officinale Roscoe), which contains essential oils and protease enzymes.
