    Abstract

    Modification of liquitt smoke distillation equipment by construct three condenser stages was aimed to prevent "oiry orn, of benmtaJpyren and tar ctuiing the process. This modification was estimated affecting sensory characteristic o7 "o"i'liquid snutke distillate fraction. Hence, the purpose of this research was investigated the effect oi dktillation temperature as well as condenser stage on sensory 9l1yc-t31istic of each fraction. The distillation process was coiducted on tentperature 90-10C" C, 100-I1f C, and 110-12f C' Distillate was produced in Jbur parts (pre-condensasation, stage I, stage 2, and stage 3). The result of this research showed that each distillatefraction had different chemical and sensory characteristic.
