    Abstract

    Gaplek flour is the result of cassava processing having a sufficiently good nutrition. It has hygroscopic property so that during the storage and distribution it is easily damaged as a result of vapour adsorption from its environment. The damage mentioned here is the mould growing on the gaplek flour. The damage encountered will result in the decreased quality of gaplek flour and affect the consumer reception level to the flour. By recognizing the vapour adsorption pattern through the determination of moisture sorption isotherm, it is expected to use in estimating the shelf life of gaplek flour. The moisture sorption isotherm curve of gaplek flour was determination with static thermogravimetry by using several saturated salt solution stored at 28oC. The 3rd degree polynomial was used to plot the relationship between the water level and water activity of dried cassava flour in order to obtain the moisture sorption isotherm curve equation. The BET equation was used to determine the single layer water level of gaplek flour. The gaplek flour was packaged in polyethylene (PE) plastic with 0.03 mm; 0.05 mm; 0.07 mm and 0.08 mm thickness; polypropylene plastic (PP) with 0.03 mm; 0.04 mm; 0.05 mm and 0.08 mm thickness and blacu cloth with predefined permeability at 28oC RH 75.62%. The shelf life was predicted using moisture sorption isotherm curve with storage condition assumed at 28oC RH 78%. The result of research shows that at gaplek flour has sigmoid-shaped moisture sorption isotherm curve with the equation y = 220,92 x3 − 224,68 x2 + 77,267 x − 0,0188. The permeability of polyethylene (PE) plastic with 0.03 mm; 0.05 mm; 0.07 mm and 0.08 mm thickness; of polypropylene plastic (PP) with 0.03 mm; 0.04 mm; 0.05 mm and 0.08 mm thickness and of blacu cloth as well as control in gH2O/day m2mmHg with predefined are 0.795; 0.68; 0.49; 0.46; 0.86; 0.675; 0.58; 0.51; 0.4; 4.99; 9.05, respectively. The shelf life of dried cassava flour packaged with polyethylene (PE) plastic with 0.03 mm; 0.05 mm; 0.07 mm and 0.08 mm thickness; of polypropylene plastic (PP) with 0.03 mm; 0.04 mm; 0.05 mm and 0.08 mm thickness and of blacu cloth as well as control are 133, 155, 215, 230, 130, 157, 182, 207, 264, 21, and 11 days, respectively.
